Ambyr's Veggie Soup

1 Tbsp Olive Oil2 tsp Garlic, minced1 cup Onion, chopped2 cup Carrots, chopped4 cup Zucchini, chopped2 cup Tomato, chopped2 cup Spinach, fresh, chopped4 cup Swanson 99% Fat Free Chicken Broth
In large pot, add olive oil, garlic and onion. Cook over medium heat until onion is translucent. Add carrots. While carrots are cooking chop zucchini and tomatoes. Add zucchini and tomatoes. Chop and add spinach. Cook until volume of vegetables is slightly reduced. Add broth and season to taste. (I use salt, pepper and italian seasoning.) Cook for approximately 20 minutes or until carrots are tender. Remove 2 cups of vegetables and set aside. Puree remaining vegetables and broth. Return the vegetables you set aside to the soup.
