Crispy Pepperoni Chips

Ingredients
6 ounces pepperoni, thinly sliced
Directions
makes 4 serving

Preheat oven to 425 degree F

Lay the pepperoni slices in a single layer on a baking sheet and bake for 8 to 10 minutes.

Remove pan from oven and soak up the excess grease by pressing paper towels against the pepperoni chips. Return pan to the oven and bake an additional 2 to 4 minutes, until pepperoni slices are very crispy.

    I used pre-sliced turkey pepperoni. I've really missed eating chips and queso since I started low-carbing, and this was the perfect substitution.     I do something similar whenever I want to add pepperoni to something (i.e. pita pizza) to cut out the grease. All I do is lay out a single layer of pepperoni on a paper towel and paper plate and microwave for about 20 seconds. Add about 5 more seconds to make them crispier. How quick is that?!?! - 2/27/09

    Perhaps I didn't slice the pepperoni thin enough but I thought 2 mm thickness would be good. I found that these ended up charred on the edges and still soft in the middle. Would not make these again. - 6/23/09
