1 Tbsp olive oil3 oz shrimp1 lg egg2 egg whitesblack pepper and salt to taste1/4 avocado sliced
Heat olive oil in small omelet pan over medium heat. Add shrimp and cook until just pink. Beat eggs with salt and pepper, pour over eggs and cook until just cooked. Slice avocado, place slices on half of omelet. Slide from pan and fold over. Serve with fruit and milk for a complete meal.
