Vegetarian Black Eyed Pea Soup

Ingredients
1 Can Black Eyed Peas, drained (15.8 oz)2 Cans Chicken Broth (10.75 oz)1/2 cup diced onion1/2 cup diced carrots1/2 cup diced celery1/2 clove minced garlic1/2 tsp salt 1/4 tsp black pepper1/4 tsp italian seasoning
Directions
Makes approx 4 1-cup servings

Dice onions, carrots and celery and put in a medium sized pot. Add pepper, minced garlic and about 1/2 can of the chicken broth to the veggies. Bring to a boil. Add the drained beans, italian seasoning and the rest of the chicken broth. Heat on medium heat for 20 minutes or so.
