Smoked Turkey Enchilada Casserole

6 flour tortillas, torn into quarters2 c chopped smoked turkey - dark meat 1 c sliced button mushrooms1 can refried beans1 can medium enchilada sauce1 can sliced black olives, drained1 c shredded cheese1/2 c sour cream, reduced fat
Spray 9x9 baking dish with nonstick spray.
Pour in 1/4 enchilada sauce. Layer 2 torn tortillas to cover the bottom.
Layer 1/2 can refried beans, 1 c turkey, 1/2 c mushrooms, 1/2 can olives, 1/2 c cheese, 1/4 c sour cream.
Pour over slightly less than 1/4 enchilada sauce. Layer 2 more tortillas.
Repeat turkey, etc layer.
Top with last 2 tortillas, remaining enchilada sauce.
Baked 350 for 20-30 minutes, until warm through and bubbly.
Makes 6 servings.
This will fill a 9x9 pan to the top! You might want to bake it with a foil lined cookie sheet under the pan to avoid any spillage!
