Reuben Casserole from Roger

Ingredients
2 lb jar Sauerkraut, drained2 Tbsp butter1/4 cup Thousand Island dressing9 oz Budding corned beef thin sliced4 oz swiss cheese1 tube Hungry Jack Biscuits3 Rye Crisp crackers1 Tbsp caraway seed
Directions
Grease 9x13 pan. Spread drained sauerkraut in bottom of pan. Dot with butter and dressing. Cover with corned beef, then cheese. Bake at 425 for 15 min. Remove from oven and top casserole with separated biscuits, completely covering top of casserole. Sprinkle crushed crackers and caraway seed over top of biscuits. Return to oven and bake 15 minutes more.

    Casserole was good - satisfied at least two picky eaters.

    I made half of the dish as a Reuben (corned beef), 1/4 as a Rachel (turkey) and 1/4 Rachel-Reuben.

    I'm not sure we liked the biscuits on the top. May serve on a piece of Rye Toast next time. - 2/21/10

    This recipe has was to tweak it to make it better for you. Maybe use less than the tube of biscuits or skip it all together, cut out the butter, change to 2% or fat free swiss cheese, and switch the regular thousand island to the low fat, low calorie version. Cant wait to try it. - 1/8/09

    I LOVE Reubans, this sounds so good...the ones I grew up with didn't have thousand island dressing, so I wonder if without that and use the crackers instead of biscuits (it might cut the calories). - 1/5/09

    I'm always looking for ways to use good sauerkraut. This recipe has possibilities if you leave the biscuits off and serve reasonable portions on whole grain rye bread. That should bring the calorie and fat content down quite a bit. - 1/4/09

    Sorry, I had never done this before and didn't realize other people were going to be looking at it. I was calculating it because I took it to a party and wanted to try a small portion. It is not very low in calories.

    Sorry, I hadn't done this before and I didn't understand the purpose. I'll get it figured out and hopefully fix it tonight.
