Dirty Risotto

Ingredients
1 cup onion, chopped1 cup bell pepper, chopped2 cups mushroomsm, chopped2 Tbs butter, unsalted6 oz Spicy Italian Sausage7 cups chicken broth, low sodium, fat free1.5 cups Risotto style rice1 Tbs salt2 tsp black pepper1/4 cup red/white wine1 cup Asparagus, chopped
Directions
Heat chicken broth in sauce pan, keep on low.

Brown sausage, add butter, mushrooms, bell pepper, mushrooms, salt and pepper. Saute until veggie are tender. Add rice and cook 1 minute. Add wine and cook until absorbed, stir constantly. Add chicken broth, 1/2 cup at a time, cooking until all liquid is absorbed before adding next 1/2 cup, stir constantly. When adding the last 1/2 cup of liquid add asparagus. When all liquid is absorbed, add cheese and stir until melted. Makes 6 servings
