Cajun Shrimp Bisque

Ingredients
1 medium onion, finely chopped3 stalks celery, finely choppedOlive Oil2 cans chicken broth2 cans pumpkinDash of cayenne pepper4 cloves garlic, minced1 1/2 TBSP Zatarain's Liquid Shrimp and Crab Boil24 oz bag frozen, cooked, shelled and deveined shrimp, thawedSalt and Pepper to tasteDash of garlic powder1/2 C milk
Directions
Saute finely chopped onion and celery in a small amount of olive oil until soft. Add minced garlic and saute for 1 minute. Using a whisk, add one can of pumpkin and 1 can of chicken broth and stir until smooth. Add the second can of pumpkin and the second can of chicken stock and whisk until smooth. Add cayenne, salt, pepper, Crab and Shrimp Boil and a dash of garlic powder and simmer for 30 minutes.

In the meantime, remove tails from shrimp and cut into bite sized pieces. Place in a pan with a small amount of oil and saute until just heated.

After bisque has simmered for 30 minutes, add a half cup of milk and stir. Add shrimp and simmer for 5 more minutes then serve.
