tangy chicken salad

Ingredients
Mixed greens of your choice 4 cups Sweet Red Bell Pepper 1 Cup chopped or Julienned your choiceCucumber sliced thin one cup dried cranberries (Craisins) 1/2 cupGrapes seedless washed 1 cupChicken Breast roasted or dry pan fried 1/2 lbHoney Mustard dressing (or Sweet Vidalia Onion dressing works well too)
Directions
On a cookie sheet with raised rack place chicken breasts seasoned to taste ( I use garlic , salt , pepper and cumin). roast in oven until internal temp of 165 degrees. Remove from oven and cool. Toss together the diced red peppers, cucumbers, craisins grapes and field greens. Add dressing and chicken and toss again. Makes approx 4 1.5 cup servings.
