Tyler's Ultimate Tuna Salad

3 cups good quality canned tuna (packed in water), drained1/4 cup honey, cane juice, or non-sweetened mayonnaise (NOT with sugar or HFCS)4 cornichons, chopped2 tsps dried dill1 tsp dried tarragon leaves2 tsp dried parsley leaves2 tablespoons capers, drained1 lemon, juicedKosher salt and freshly ground black pepper1/4 cup extra-virgin olive oil2 spelt or sprouted grain bagels, sliced and toasted1/2 red onion, thinly sliced crescents1 vine-ripened tomato, sliced1 seedless cucumber, sliced4 Bibb lettuce leaves
Combine ingredients down to the bagel in a large mixing bowl and stir to combine. Taste and adjust seasoning with salt and pepper.
Take cut bagels and toast under a hot broiler until golden brown. Top with a scoop of the tuna salad and then layer with red onion, tomato, cucumber and lettuce.
