* Corned beef, brisket, 3.5 lbs * Apples, fresh, 1 medium (2-3/4" dia) * Red Potato, 2 lbs * Cabbage, fresh, .5 head, medium * Cabbage, red, fresh, .5 head, medium * Enough water to cover meat and eventually all vegetables
Put corned beef in boiling water for 10 minutes, lower to simmer for 3 more hours. Shred cabbage and cut apple into quarters then halve by width for half-wedges. Add cabbage, potatoes and apple to corned beef when about 30 minutes are left. Cook at simmer until potatoes are tender - at least 30 more minutes. Add enough hot water to cover all.
