1 cup butter2 cups brown sugar4 eggs1/2 cup molasses3 tablespoons sugar free raspberry jam2 apples, grated (peel & flesh with center seeds scooped out)1.5 cups dates1-2 cups dried mixed fruit1.5 cups raisins1 cup dried cherries1 cup chopped walnuts2 cups currants5 cups flour1 tsp. salt1 tsp each of nutmeg, cinnamon, cloves, and ginger1.5 tsp. baking soda1 cup hot coffee
Cream butter and add the sugar and eggs; beat well. Add the molasses, jam, fruit and nuts; mix well. Add sifted dry ingredients (flour, salt, and spices) together; add them to the fruit mixture ad blend thoroughly. Dissolve the soda in the hot coffee and add to the batter; mix well. Line a large spring-form pan with waxed paper and grease with butter. Bake at 300 deg F. for 3 hours or until toothpick inserted in the center comes out clean. Cake may be covered in the oven, if you do so remove the cover to allow to brown on the top.

In North America a cup equals 8 oz. The standard measuring cup size. If you don't have a set of measuring cups you should purchase a set. I can't imagine getting by in a kitchen or a diet without them.
