L.R. refried black beans

Ingredients
8 cups cooked black beans with liquid2 cups finely chopped onions2 T. lard or bacon fat1 T. minced garlic, divided1 T. cumin1 T. chili powder1/2 tsp. pepper1/2 tsp. red pepper1/2 tsp. ground margarom, opt.about 1-2 cups water or as needed
Directions
Mash the beans with their liquid. In a large skillet, melt the lard over medium heat. Add the onions and half of the garlic. Saute until tender and transparent. Add spices and saute a little longer. Add the mashed beans and stir-fry for 20-30 minutes adding water as needed to keep the texture that you want. Add remaining garlic and continue cooking for about 1 more minute. Remove from heat and serve. Makes about 8 generous cups.
