Mexican chicken manicotti

Ingredients
8 manicotti shells uncooked1.1/2 c cut up chicken1 c carrots shredded1 c ricotta cheese part skim2 tbls parsley1 med green onion1 clove garlic1 cup salsa1/4 c shredded monterey jack cheese with jalapeno pepper
Directions
Heat oven to 325 cook and drain manicotti shells.
Mix carrots, chicken, ricotta cheese, parsley, onion and garlic.
Fill manicotti shells
Place filled shells into an ungreased baking dish. por salsa over manicotta and sprinkle with monterey cheese. Cover and bake 35 minutes
