Cheesy Chicken Enchiladas

Ingredients
1 1/2 cups cooked chicken breasts, shredded1 cup reduced fat sharp cheddar cheese, shredded1 cup picante sauce3 ounces low-fat cream cheese 1 teaspoon chili powder8 (6 inch) flour tortillas1 1/2 cups red taco sauce
Directions
1. Pre-heat oven to 350 degrees.
2. Place a large non-stick pan coated with cooking spray and add chicken, 1/2 cup cheddar cheese, picante sauce, cream cheese, and chili powder.
3.Cook over medium heat for about 3 minutes, or until cheese is melted.
4. Spoon about 1/3 cup chicken mixture down the center of each tortilla, roll up, and place in 13x9 baking dish.
5. Drizzle the tortillas with taco sauce, and sprinkle with 1/2 cup cheese.
6. Cover and bake for 15 minutes, or until cheese is melted. Serve while hot!

    The taco sauce was overpowering. I liked the cream cheese in the filling. I might try it with red enchilada sauce in place of the taco sauce next time. - 1/21/09
