Cheesy Mashed Potato Soup

Ingredients
1 medium onion, chopped, 2 medium carrots, coarsely grated, 3/4 tsp salt, 1/2 tsp black pepper, 1/2 tsp paprika, 1/2 tsp dry mustard, 1 pound red potatoes, chopped, 29 oz chicken broth, 1/2 cup fat free half and half, 8 oz low fat cheddar cheese
Directions
Cook onions until soft. Add carrots and all seasonings and cook 2 minutes. Add potatoes, broth, and half and half. Bring to a boil, reduce heat and simmer for 20 minutes until potatoes are done. Add cheese. Stir to melt. Mash potatoes or puree. Makes 6 1-cup servings.
