Leftover Ham Bone and Lentil Soup

Ingredients
Ham Bone8 cups water1 tbsp EVOO3 cloves garlice -pressed3 med onions chopped1 cup celery chopped1 cup carrot chopped2 cups dried green lentils32 oz low sodium chicken brothCinnamin stickBay leafsteamed/cooked greens (optional)
Directions
Use one large pot to simmer ham bone in 8 cups water.
Sautee veggies in 2nd large soup pot in EVOO for 3-5 minutes. Add broth and lentils.
Add ham and liquid to veggies
Add cinnamin stick and bay leaf.
Cook for 90 minutes.
Shave meat off bone (discard bone)
Discard cinnamon stick & bay leaf
Add pre-cooked greens (optional)

    You really don't need any EVOO in this recipe. Save the calories. This is a real comfort recipe, especially with cornbread. - 1/18/09
