Saute-Steamed Bok Choy

Ingredients
1 lb bok choy1 clove garlic, minced1 Tbsp greated fresh ginger1 Tbsp Extra virgin olive oil2 Tbsp water1 tsp reduced sodium soy sauceDash of ground black pepper1 tsp dark sesame oil
Directions
Cut 1 inch off the bottom of the bok choy and separate the stems and leaves. Cut the stems into small pieces and cut the leaves crosswise into medium strips. In a large pan saute the garlic and ginger in the olive oil for a minute over medium heat. Add the bok choy stems (they take longer) and saute 3-5 minutes more. Add the leaves and water and cook another 6 minutes, stirring occasionally. Season to taste with soy sauce and pepper. Stir in the sesame oil and serve while hot.

    I made this for dinner tonight, and it was excellent! I used tamari instead of low-sodium soy sauce, but still had to add an additional Tbsp for my taste. I also added a few dashes of chili powder for a little extra kick. I will be making this regularly from now on, it was fantastic!!! Thanks! - 1/16/09
