Chicken Quesadillas

Ingredients
1 lb. grilled chicken breast, chopped1 medium onion, chopped1/2 cup green bell pepper, chopped1/2 cup red bell pepper, chopped1/2 cup jalapeno peppers, chopped2 tsp. canola oil2 cups shredded cheddar cheese4 10" flour tortillasNon stick cooking spray
Directions
In a large fry pan, heat the canola oil. Add the chopped onions and cook until limp - about 2 minutes. Add the bell peppers and jalapenos and cook until just warmed through. Add the chopped chicken breast and salt and pepper to taste. Cook until warmed thoroughly.

Heat a large griddle pan or fry pan on medium-high heat. Remove a tortilla from the package and spray one side lightly with cooking spray. Place oiled side down on the griddle pan and immediately sprinkle the entire tortilla with 1/2 cup of the shredded cheddar cheese (cover to about 1/4" from the edge all around).

Let tortilla "cook" until cheese starts to melt and the tortilla gets toasty. Sprinkle 1/4 of the chicken/peppers mixture over HALF of the cheese. Then fold over the other side, cut into slices and serve.

Great with salsa or light sour cream or even guacamole, if you like that stuff!
