Beef & Rice Enchilada

1 lb ground trukey (93% lean)1 small onion chopped1 clove of garlic pressed1 6oz can tomato paste3/4 c water1 c cooked brown rice3 c reduced fat cheddar cheese or mexican blend1 1/2 tsp oregano1 tsp garlic salt1 tbsp chili powder pinch of red pepper (optional)10 - 12 flour tortillas (low carb, heart healthy)8 oz salsa1 can enchilada sauce
Cook ground turkey with onion & garlic until no longer pink. Add tomato paste, water, cooked rice, 2 c cheese, salsa and seasonings. Stir to mix well. Cook over low heat until thickens. Meanwhile, spread 1/4 cup enchilada sauce in bottom of 13 x 9 pan that has been coated with cooking spray. Spread 1/2 cup meat mixture onto tortilla and roll. Place enchiladas seam side down into pan. Pour remaining sauce over enchiladas and top with 1 c cheese. Bake at 350 for 10- 20 min. Makes 10- 12 enchiladas.
We like to top them with lettuce, tomato, green onions and cilantro for an authentic look and taste. Also a tbsp of low fat sour cream and extra salsa if you like.

I had errands to run yesterday so I left my boyfriend with the recipe and everything laid out for him. He complained that it took to long, and it was turkey NOT beef... BUT when all was said and done, he was surprised that he REALLY liked them!As he didn't think he would! Will def make again! - 1/27/09
