Vegan Chipotle Sausage (Field Roast brand), one link, sliced1.5 cups cooked pinto beans.5 cup plain tomato sauce1 medium carrot chopped1 med or 2 small rutabagas, peeled and chopped2 tbls chopped onion2 tbls chopped green pepper2 tbls chili seasoningsalt to taste
I had some rutabagas and I never made them before and came up with this. Steam chopped rutabagas and carrots in a vegetable steamer for 10-15 minutes. Meanwhile saute onions and peppers in olive oil spray in a saucepan over medium heat until soft. Add sausage and stir for one minute. Add sauce, beans, spice, salt to taste and simmer a minutes. Add steamed drained veggies and stir to incorporate. Simmer for a few minutes more then serve. Adjust the chili if needed (I like it spicy). I topped this with plain soy yogurt to serve.
