Shrimp Stir Fry

Ingredients
6 oz Shrimp, peeled1/4 tbsp low sodium soy sauce1/2 tsp rice vinegar1/4 c chicken broth (fat free)1 clove garlic15 slices ginger1/2 c red onion, in wedges1/2 c broccoli florets1.25 c snow peas, trimmed1.5 c mushroom slices1/4 c yellow bell pepper sliced1/4 c water chestnuts
Directions
rinse shrimp and drain
heat the soy sauce, rice vinegar and chicken broth over medium heat.
add garlic & ginger and saute until tender
add all the veggies
when the veggies are cooked 1/2 way, add the shrimp
cook until shrimp are opaque
serve over rice (optional)
