Salmon & Goat Cheese Omelet

Ingredients
3 large eggs2 oz garlic & herb goat cheese1/2 sweet pepper3/4 medium onion1 tbsp grapeseed oil3 oz canned pink salmon1/4 c. low fat milk
Directions
saute vegetables in oil until soft.

Whisk eggs with milk. Add salt and pepper if desired.

Cook eggs, adding remaining ingredients as egg becomes firm. Fold over and heat in oven until cheese is melted.
