Roasted Vegetables

Ingredients

2 cup, sliced Zucchini1 cup, chopped Onions2 cup slicesSummer squash2 Red Potato1 cup tomatoes1 tbsp Olive Oil1 tsp Salt1 tsp Pepper, black1 tsp Garlic powder
Cut up potatoes and microwave until mostly cooked.
In a 9 x 9 baking dish chop and combine all vegetables with olive oil (spray works best), salt, pepper, and garlic powder. (you can also use fresh garlic which is ideal!)
Roast for 15 min at 400 degrees
Stir the veges and put them in for another 15 mins
Broil them for a 2-5 mins at the end if you like your potatoes a little crunchy!
