Seafood Frittata

Ingredients
Olive Oil, 2 tbsp Onions, raw, .5 medium (2-1/2" dia) Asparagus, fresh, .5 cup Garlic, 1 tsp Lobster, broiled (3 oz. cooked), 2 serving Alaskan King Crab, 16 oz *Lemon Juice, 1 fl oz Portabella Mushrooms, 8 slicedEgg substitute, liquid (Egg Beaters), 1.5 cup Egg, fresh, 3 large Honey Mustard, 3 tsp Parmesan Cheese, grated, .25 cup *Cabot Vermont 50% Light Cheddar Cheese, 4 oz
Directions
Preheat oven to 375 F. Saute the onion in olive oil, in a pan you can put directly into the oven. Add the asparagus and garlic and saute a minute or two more. Add your lobster, crab and add your lemon juice. Add your mushrooms and Old Bay and let cook about 3 minutes, med-high. Mix your Beaters with your eggs, dill, red pepper, mustard, Parmesan, salt and pepper. Remove the pan from the heat and add your egg mixture. Sprinkle your cheese on top. Place in the oven about 20 minutes. Remove and let sit 5 minutes before slicing.

Served over Honey Mustard Broccoli Slaw and Microwaved Mashed Acorn Squash.
