Chicken Adobo

Ingredients
1 lb of chicken thighs3-4 garlic cloves2 bay leaves1 tsp black pepper1/2 tsp of brown sugar1/2 cup soy sauce1/2 cup white distilled vinegar1/2 cup water1 tsp olive oil
Directions
Mince garlic cloves set aside. Add 1/4 tsp of pepper to chicken thighs on both sides. Heat 1 tsp of olive oile in a dutch oven or large pan. Brown chicken thighs on both sides. Add the soy sauce, vinegar, water, bay leaves, brown sugar, and bay leaves to the chicken. Bring to a boil and then let simmer on low for 1 1/2 - 2 hours. Serve over brown rice and enjoy!
