Chicken Cheese & Green Chili Soup

2 tbsp country crock spread1 whole chicken Boiled and cubed2 medium diced yellow onions4 cloves of garlic diced15 Roasted Anaheim chilis ( or 1 28 oz can of diced green chilis)2 large tomatoes diced3 cans Rotel Diced tomatoes with green chili and cilantro (or three cups)6 medium potatoes diced 2 16 oz bricks of Colby Jack cheese shreddedapprox 12 cups of watersalt to taste
makes 12 2 cup servings
Roast green chilis and dice.
In a large soup pot, melt butter and saute onions and garlic over medium heat.
When onions are soft, add green chilies and tomatoes. Simmer 10 minutes, stirring every minute or so.
Add chicken, potatoes, canned tomatoes, and water. Cook over medium heat until potatoes are done, 20 -30 minutes.
On very low heat, simmer about 60 minutes.
Add salt to taste.
Add cheese to soup at the very end, stir and serve.
