Spinach & Goat Cheese Pizza

Ingredients
1 12 inch prebaked pizza crust2 tbs olive oil2 cloves garlic, finely minced1/4 tsp crushed red pepper1 bunch fresh spinach1/4 tsp salt1/4 tsp freshly ground pepper4 oz fresh goat cheese, crumbled6 oz mozzarella cheese, crumbled
Directions
In a large skillet over medium high heat, saute garlic and red pepper in olive oil for 3-5 minutes. Rinse, drain and coarsely chop spinach and add to pan. Saute in olive oil until wilted and liquid has evaporated. Add salt and pepper. Place pizza crust on round baking pan and preheat oven to 425 degrees. Top pizza crust with spinach mixture and sprinkle with cheeses. Bake for 10 to 12 minutes until cheese is melted and bubbly and crust is crisp.

    This pizza was so yummy! I didn't have red pepper, which the recipe calls for, but it was still very good. A bit high in calories, but definitely a fun treat now and then.

    Make sure to get actual goat cheese, not just feta...I think it'd still be good with feta, but plain goat cheese is wonderfu - 3/23/09
