North African Rice

Ingredients
16 dates, pitted & diced2 navel oranges, peeled, divided into segments, and cut into thirds2 scallions1/4 c. raisins1/4 c. minced fresh parsley1/4 c. extra-virgin olive oil2 tbsp lemon juice1/4 tsp cinnamon1/4 tsp cuminsalt/pepper to taste*you can fool around with other spices as well, or add more of less of what you like. I usually add more cumin
Directions
boil 2 - 21/2 c. of water. Add brown rice, stir once and cook covered, over low heat for 35 - 45mins. When it's finished let it stand for 5 - 10 mins and then add the other ingredients.
serve at room temperature
I've found that this salad tastes better the day after!
