Roasted Squash and Goats cheese

1 Medium Butternut squash50g soft crumbly Goats Cheese2 slices Bacon1tbsp Olive oil2-3 sprigs RosemaryBlack Pepper to tasteMixed Salad leaves to serve
Peel and chop squash into 1 inch pieces.
Heat the olive oil in an oven dish and add the rosemary (or other flavouring e.g. cumin seed). Add squash to dish and coat with the oil.
Place squash in the oven at gas 5 turning occasionally for 35 minutes or until soft.
Meanwhile grill Bacon until crispy and chop into small pieces.
Prepare salad.
When squash is cooked, serve over salad, crumble over the goats cheese and let it begin to melt.
Sprinkle over the bacon, season and serve.
