Christmas Carrot Pudding

1 cup Carrots-grated with a small grate1 cup Flour1 Tbsp Sour Milk or Buttermilk1 tsp Cinnamon1 Egg1 cup Pecans Chopped1 cup Sugar1 cup Raisins (ground in food processor)1 Tbsp Shortening1 tsp Soda1/4 tsp Salt
Dissolve soda in milk, then mix with rest of ingredients. Steam in a well greased mold for 1 to 1 1/2 hours or until toothpick in center comes out clean. Be sure to check while steaming because it can burn quickly. Serve warm with milk or GG's Vanilla Sauce (see recipe)
