Vegetable Breakfast Burritos

Ingredients
2 lg eggs2 egg whites1 Tbsp olive oil2 cups spinach1/4 cup roasted red peppers1 can mushrooms1/2 avocado4 tortillas2 T salsa
Directions
Chop red peppers, remove stems from spinach and drain mushrooms, dice avocado; set aside. Beat eggs with seasonings of choice (I like cayenne, garlic and black pepper); set aside. Heat olive oil in non-stick skillet. Add spinach, peppers, avocado and mushrooms. Saute until spinach is wilted. Add eggs and scramble until just cooked. Split egg mixture between four tortillas. Top with salsa, roll and serve. Two burritos per serving.
