Parsnip Puree

Ingredients
3 parsnips or other root veggies.5 cup milk1 Tbsp. Light margarine
Directions
Cut up veggies and boil, covered for 30 min. Drain and transfer to a bowl and add milk. Puree until almost smooth with mixer. Add back to pot and cook until heated. Add margarine and serve.
