2 TBS Olive Oil1 Lg onion1 1/2 tsp. ground cumin1 tsp. chipotle chile powder2 cans 28 oz each whole tomatoes in puree1 med. cauliflower, cut into florets about 4 cups2 med. sweet potatoes peeled and cut int 1/2 inch cubes4 lg. carrots peeledn and cut into 1/4 inch coins1 lg. green bell pepper, cut into 1/2 inch dice1/2 tsp. salt1 can 15oz mexican chilli beanssliced scallions for garnishbrown rice optional
1. Heat olive oil in a lg. pot over med-high heat. Add onion and cook for 5 min, stirring occasionally. Stir in cumin and chile powder; cook 1 min. Stir in tomatoes, breaking up with a spoon
2. Stir in cauliflower, sweet potatoes, carrots, green pepper and salt. Cover and bring to a boil. Reduce heat and simmer, covered for 25 min. Stir occasionally. Add chilli beans and simmer for 5 min. or until veggies are fork-tender.
3. Garnicsh with scallions and serve with brown rice if desired.
