Cheese Grits for Two

Ingredients
1 cup water1/4 cup white or yellow corn grits1 teaspoon butterPinch of salt1/4 cup grated cheddar cheese
Directions
Bring 1 cup water to a boil in a small saucepan, add salt and butter, then add grits, pouring in a slow steady stream. Stir well and lower heat to a simmer, cook 5-10 minutes until the grits have thickened to the consistency of oatmeal. Stir in the grated cheese and serve.

This recipe makes (2) 3/4 cup servings. You can easily double/quadruple it for more people.

    I added a teaspoon of garlic powder and left out the butter but added a few squirts of spray butter. We had this with grilled salmon and veggies for dinner - YUM! - 9/1/10
