Rice with Veggies

Ingredients
White Rice, long grain, 1.5 cupWater 3 cups boiling Green Peppers (bell peppers), 0.5 cup, chopped Onions, raw, 0.5 cup, chopped Garlic, 1 tspCarrots, raw, .5 cup, chopped Olive Oil, 2 tbsp Salt
Directions
Sautee the veggies with the rice in olive oil until golden brown.
Add boiling water and salt. Lower heat and allow it to simmer. Stir often so that it doesn't burn on the bottom. Rice should be fluffy and dried.
