M&E Beef Enchilada (Low Carb)

Ingredients
Extra lean ground beef, medium and mild salsa, enchilada sauce, low carb buritto shell, GV Fiesta Blend Cheese
Directions
Brown Ground Beef, drain any fat, and then add a mixture of mild and medium salsa to ground beef. Cook on low until partially absorbed. Put 1 TBSP enchilada sauce on Mission Low Carb Tortilla and add 1/2 oz. GV Fiesta Blend Cheese. Add 4.5 oz of Beef and Salsa Mixture. Roll into enchilada and top with 1 TBSP enchilada sauce and add 1/2 oz. GV Fiesta Blend Cheese. Microwave on High 1 minute.
