Weight Watchers Hearty Turkey Chili

1 spray cooking spray1 tsp canola oil1 large onion, chopped2 med garlic cloves, minced2 med carrots cut in rounds19 oz pkg 93% lean ground turkey2 tbsp chili powder1 1/2 tbsp paprika1 1/2 tsp red pepper flakes1 tsp ground cumin2 med tomatoes chopped or 1.5 canned diced1 c tomato sauce1 c chicken broth1 1/2 tbsp cider vinegar1 1/2 c kidney beans, rinsed and draines1 med green pepper, chopped1/2 tsp salt, or to taste1/8 tsp black pepper, or to taste1/4 c scallions, chopped
Coat a large pot with cooking spray; place over medium heat. Add oil and onion; saute onion until soft, about 5 to 7 minutes. Add garlic and carrots; cook unil garlic is softened, aboaut 1 minute. Add turkey; brown meat, breaking it up with a wooden spoon as it cooks. Stir to break up lumps.
Add chili powder, paprika, red pepper flakes, cumin tomatoes, tomato sauce, broth, vinegar, beans and green pepper; bring mixture to a boil. Cover, reduce heat and simmer until meat and vegetables are tender, about 30 to 45 minutes. Season to taste with salt and pepper; garnish with scallions. Yields about 6 - 1 cup servings.
