Mini Cheesy Corn Muffins

Ingredients
1.25 cp all-purpose flour1 cp yellow corn meal1 tbsp baking powder1/2 tsp salt1 cp 2% milk1 (8.75 oz) can creamed corn2 large eggs1/4 cp canola oil6 oz shredded cheddar cheese1/4 cp sugar
Directions
Pre-heat oven to 375, grease/spray mini muffin tins. Set aside 1 cup of cheddar for garnish. In a medium bowl, combine dry ingredients with whisk or fork. Add milk, oil, corn, mix until batter-like. Fold in remaining cheese. Pour/spoon batter into tins and sprinkle tops with cheese. Bake 10-12 minutes or until puffed and golden.

Makes 4 dozen mini muffins or 16 large.
