Ingredients
Bell Pepper, any color, 1 dicedOnion, 1 medium dicedChickpeas (garbanzo beans), 1 can rinsedDiced Tomatoes w/ Basil, Garlic- 2 cansZuccini or other squash, 1/2 cup choppedBeef or veggie broth -- 2 cup (16 fl oz) Water, tap, 1 cup (8 fl oz) Garlic, 1T mincedFresh Basil, 2 tbsp chopped small
Directions
Drop everything into a crockpot and set to high for 5 hours. I often add whatever vegetables I need to use up. You may want to sub lower sodium items and/or dilute with additional water.
