Bean Zoop II

Ingredients
1 lb dry beans, soaked over night in salty water1 T extra virgin olive oil1 lb fresh italian hot sausage1 large onion chopped2 medium celery ribs chopped2 medium carrots peeled and chopped6 medium garlic cloves4 cups low sodium chicken broth3 cups water1 bunch kale1 can diced tomatoes (14.5 oz)
Directions
Soak the beans overnight. Drain and rinse.
Fry the sausage in evoo, breaking into small bits
Remove sausage into paper towel in a dish, cool in fridge
Saute veggies, add garlic toward end.
Add broth, water, bay, and beans, bake @ 250 for 1 hour
Stir in greens and toms and sausage, back to oven for 30-40 min.
remove from oven, soak a rosemary spring for 15 min. discard bay and rosemary.
