Hearty Whole Wheat Cornbread Muffins

Ingredients
1 cup cornmeal1 cup whole wheat flour1/2 teaspoon salt1/3 cup Splenda1 tablespoon baking powder1.25 cups skim milk1 egg (equivalent in egg substitute like Egg Beaters)1/4 cup oil1/3 cup nonfat sour cream
Directions
Preaheat Oven to 400 degrees
Makes 12 muffins

Combine dry ingredients and stir to thoroughly mix. In seperate small bowl mix remaining ingredients and stir into dry ingredients until evenly moistened. Spray muffin tin with cooking spray and place in 400 degree preheated oven for 20-25 minutes until golden brown. Leftovers freeze and reheat well, about a minute in the microwave. Excellent with soups, chilli, and stews!
