Easy and delicious! Could add eggplant, but I didn't have any. I cut the recipe in half (omitting the red and orange pepper because I didn't have any). So glad, I have leftovers, it's that good! - 5/18/12

I added some asparagus, summer squash, and italian seasoning. Also, I only used 1 tbsp of olive oil along with some olive oil cooking spray to reduce the calories. This is my favorite way to get in lots of servings of veggies!! - 6/25/11

This was awesome! I added potato, onion & squash & omitted peppers. Instead of salt & pepper I used Mrs. Dash. YUM! Great way to cook veggies.

I make this all the time - I usually sub out a pepper for a summer squash. Perfect side to anything, and leftovers are awesome with pasta! Several thumbs up :) - 7/18/08
