1 Medium Orange Pepper1 Medium Yellow Pepper1 Medium Red Pepper2 Medium Zucchinis1 Red Onion2 Cloves Garlic2 Tablespoons Extra Virgin Olive Oil
Preheat oven to 450. Cut peppers, zucchini and onions into bite size pieces. Place in a roasting pan or cookie tray. Add minced garlic, olive oil, salt and pepper to taste and mix to coat all veggies. Roast in middle of oven for 30 minutes, stirring occasionally.
