Ingredients
1/2 Cup Fresh Sliced Mushrooms3 Cherry Tomatoes (Sliced)1tsp. Garlic1/4 Cup Sliced Onions1 Cup Fresh Spinach Leaves2- 1inch cubes of feta cheesePam Olive Oil SprayWhole Wheat English Muffin
Directions
In a skillet saute' mushrooms, tomatoes, garlic, and onions in cooking spray. Toast you muffin while saute'ing veggies. When veggies have softened, add the spinach leaves, and continue stiring until wilted.

Pile veggies on each half of english muffin. Crumble feta cube on each muffin. Place under broiler until feta is melted and enjoy!!!
