Mexican Stuffed Peppers

Ingredients
medium onion chopped2 tsp garlic1/2 pound ground turkey breast1 tbsp olive oil1 packet Ortega Taco Seasoning1-15oz can black beans1-14.5 oz can diced tomatoes1 cups brown rice4 bell peppers1/2 cup reduced fat cheddar cheese
Directions
Preheat oven to 375.
Cut tops off of peppers and place in baking dish.
Add oil to skillet and saute onion. Add garlic.
Brown turkey then add taco seasoning. At the same time prepare rice according to package instructions.
When meat and taco seasoning have combined add can of tomatoes and black beans.
Combine meat mixture in a bowl with rice.
Stuff meat and rice mixture into peppers.
Place a small amount of water in bottom of baking dish and cover with tinfoil.
Bake for 45 minutes then remove cover and bake for additional ten. Add cheese and bake until bubbly. Makes 6 servings.
