Stuffed Fish with Lemon Sauce

4 x 4oz fish fillets (sole, basa or flounder about 1/4 inch thick)1 x 10 oz package frozen spinach - choped and thawed1 beaten egg1 cup stuffing mix1/2 cup light sour cream1/2 cup light miracle whip dressing1 tsp lemon peel1 tsp mustard
Rise fish and pat dry. Season with salt and pepper.
Drain spinach and combine spinach, egg and stuffing. Spoon 1/4 of mixture onto each fillet. Roll and secure with a toothpick. Place in a greased baking dish and cover. Bake 350 f for 30 - 35 minutes. or until fish flakes easily with a fork and filled is hot.
For sauce combine sour cream, miracle whip, lemon and mustard and heat. Serve over cooked fish.
