1 cup chicken broth1 tablespoon sugar1 tbsp white vinegar2 tbsp soy sauce½ tbsp cayenne pepper1 tbsp red pepper flakes 1 tbsp olive oilboneless chicken, cut in stripsgingergarliconion powder1/3 cup dry roasted peanuts2 tbsp peanut butterbroccoli, onions, peppers, etc. (optional)Serve with rice.
1. Mix broth, sugar, soy sauce, vinegar, peanut butter and cayenne pepper; set aside.
2. Add oil to skillet. Add chicken, sprinkle enough garlic, onion powder and ginger to coat chicken.
Stir-fry for 3 minutes or until chicken is no longer pink.
3. Add vegetables, stir-fry 1 minute
4. Add broth mixture to chicken. Cook and stir 1 minute or until sauce thickens.
5. Serve over rice, sprinkle with crushed peanuts
