Lowfat Peach and Pecan Muffins

Ingredients
1/4 c butter, softened1/2 c sugar1 egg1/2 c reduced-fat sour cream1/2 c unsweetened applesauce1 tsp vanilla extract1 1/2 c all purpose flour1.5 tsp baking powder1 c frozen thawed peaches or fresh peaches, chopped1 c pecans, chopped
Directions
Cream butter and sugar with mixer. Add egg, sour cream, vanilla and applesauce. Combine flour and baking powder in a separate bowl, then stir into the applesauce mixture just until moistened. Fold in peaches and pecans. Bake at 400 degrees for 20-25 minutes or until done. Makes 15 medium-sized muffins.
