Cottage Cheese Pancakes

Ingredients

1 1/2 cups flour1/3 cups white sugar2 Tbsp cinnamon1 tsp nutmeg1/2 tsp cram of tartar6 large eggs--seperated1 cup of milk--you may need to add a little more if you want a thinner consistency8 oz tub fat free cottage cheese
seperate eggs and beat the whites in a bowl with cream of tartar---set aside
beat egg yolks in another bowl until thick
Add the milk, flour, sugar (you can omit sugar if you wish), cinnamon, nutmeg and cottage cheese to the yolks and beat together.
FOLD in the egg whites and stir just to combine.
In a NON-STICK pan (I use butter PAM too) and MEDIUM heat pour batterinto desired size (don't make too big--about 6 inches across max).
Cook slowly to allow the cheese to melt. Turn.
Serve
I sprinkle with lemon juice
Can spread with sugar free jam or low cal syrup or ALL THREE.
I get about 20 pancakes about 6 " diameter

I'm so glad you like them--I have been making them for years and having to measure ingredients was something as I usually just pile it all into the bowl.
