Cilantro Chicken

4 boneless skinless chicken breasts cut into 1 inch pieces3 large bell peppers cut into 1 inch pieces (we choose red, orange, and yellow)1 large yellow onion cut into 1 inch pieces2 limes juiced1 large bunch fresh cilantro finely shredded4 cups (prepared amount) brown rice
marinade chicken pieces in large ziploc bag with 1/2 the lime juice and 1/2 the cilantro for 4 hours.
Put marinaded chicken in a skillet (include all the juice from the bag) along with all peppers and onion, the remaining lime juice and remaining cilantro.
Cook over medium heat until chicken is fully cooked and veggies are tender.
Serve over brown rice.
This should make 8 servings 1 cup each including the rice.
